  A Guide to Understanding the Peruvian Menu

Peru is famous for its delicious cuisine, so it would be a shame to let the language barrier get in your way of experimenting. Print this off and carry it as a guide to aid you in your food selections. We have included translations, as well as an explanation of some of the popular Peruvian dishes that you will see on the menu.

Condiments (Condimentos)
1. Sauces - salsa (Salsa is not the Mexican dip used with tortillas. Salsa can be salad dressing or one of the many sauces that Peruvian restaurants often have on the table for spicing up dishes.)
2. Ketchup - ketchup o salsa de tomate
3. Mustard - mostaza
4. Mayonnaise - mayonesa
5. Jelly - mermelada
6. Salt - sal
7. Pepper - pimienta
8. Oil - aceite
9. Vinegar - vinagre
10. Butter - mantequilla o margarina
11. Sugar -- azúcar

Drinks (Bebidas)
1. Wine - vino
2. Beer - cerveza

5. Inca Cola - very popular, sweet soft drink in Peru
6. Soft drink - gaseosa
7. Juice - jugo (ex. Apple Juice - jugo de manzana, Orange Juice - jugo de naranja, Papaya Juice - jugo de papaya)

Fruits (Frutas)

7. Chirimoya - delicious very sweet fruit found in Peru. It is green on the outside, white on the inside with large black seeds.

9. Lime - limón (Don't confuse these with lemons. These small tart limons are very popular here and often used to add flavor to Peruvian dishes.)
10. Papaya -- papaya

Vegetables (Veduras)
1. Lettuce - lechuga
2. Mushrooms - champignones o champiñones
3. Tomatos - Tomates
4. Potatoes - papas (Papas are a fixture in Peruvian diets. More than 300 types are grown here.)
5. Artichoke - alcachofa
6. Carrots - zanahoría
7. Sweet Potato - camote (Camote is often a side dish with Peruvian dishes, especially ceviche.)
8. Avocado - palta
9. Olives - aceitunas
10. Peppers - pimientos
11. Onion - cebolla
12. Corn - choclo (Choclo is also a staple on Peruvian menus. The kernels are large, tender, and light yellow in color. It is not as sweet as other corn. Arroz con choclo (or rice with corn) is often served as a side dish.

Appetizers (Entradas)
1. Salad - ensalada
2. Anticuchos - grilled beef hearts served with spicy sauce
3. Papas a la Huancaína - potatoes in a spicy cheese sauce.
4. Choros a la Chalaca - Mussels and peppers in a ceviche vinaigrette
5. Chupe de Camarones - rich milk-based soup with shrimp, vegetables, potatoes, and rice
6. Chicharrón de pescado- fried fish

Popular Peruvian Main Dishes
1. Ají de Gallina - chicken in a creamy pepper sauce
2. Lomo Saltado - beef in onion and tomato sauce
3. Ceviche - fish marinated in onions and limes. Considered to be Peru's most popular dish. Sweet potato and corn are usually served on the side.
4. Ceviche de tiradito - similar to ceviche, but prepared without the onions
5. Cau Cau - tripe prepared with potatoes and onions in a pepper sauce
6. Cuy - guinea pig
7. Arroz con pollo - rice with chicken
8. Arroz con mariscos - rice with seafood
9. Seco de Carne - beef stew in a cilantro-based sauce
10. Tamal / humita - hand-made and prepared using stone ground corn dough with quality meats or fresh vegetables

Seafood (Mariscos)
1. Shrimp - langostinos o camarones
2. Crab -cangrejo
3. Lobster -langosta
4. Fish - pescado
5. Corvina - sea bass
6. Lenguado - flounder
7. Octopus - pulpo
8. Squid - calamar
9. Trout - trucha (The pink trout or trucha rosada comes from the Andes and is especially popular in Cusco restaurants.)

3. Dulce de leche / manjarblanco - very sweet, caramel-like sauce. It is used often in Peruvian desserts.
4. Suspiro de Limeña - dessert made of manjarblanco and merengue
5. Mazamorra morada - pudding made of purple corn and fruits
